Being able to upgrade features of you character, like weapons, armor etc. Gaining levels Cool battle engine system. Lots to do (but not too much in my opinion) Different paths to take.

It has to be fun, for a start. No ones going to want to play an rpg.
It has to be solid, and well coded, and easy to get into, but hard to master.
It has to have level ups, new weapons etc, something to keep you playing.
A decent plot, not the same, "rescue princess save world become hero from nothing" we always see.
It should feel like you have control of the characters life, so that what you do decides things. this can be a smple as the outcome of a conversation, to the outcome of the entire game.
I personally think small touches make a game great. Things that you dont notice at first, but when you do, they make you go WOW. Its all in the detail ;D
Hope that helps to some extent.

most of the time it's the graphics, if i were to have no idea what an rpg was or if i completely hated rpgs and i was offered to play a game with great graphics like secret or legend of mana or final fantasy 3 i'd keep on playing, but i love rpgs so whatever, make it so the systems are fun and easy to use, and of course you need a solid story and it must be original, as what megamushroom said, no save the princess crap, i'm playing resident evil 4 and saving that little wench is making me sick i completely hate the story and .... i'm going off topic aren't i?
i'm done
